1. Our raw orange blossom honey

Firstly, we show you the most important characteristics of orange blossom honey:

a) Colour

Orange blossom honey is a light amber incolor, but it can sometimes reach to pure white color or darker colors. It depends on its floral source.

b) Aroma and flavour

On the other hand, the aroma of this honey is persistent with a unique aromatic fragance. This unique fragance comes from  methyl anthranilate, a substance produced by citrus trees. Also, this aromatic fragance remind us to the nectar of orage blossoms.

Finally, its intensity and persistence varies according to the proportion of orange and lemon blossom it has. Also, the sensation in the mouth that this honey produces us is very different from the rest of  honeys. For this reason, this honey has a very peculiar taste and popular.

c) Trees that give the orange blossom flower

Orange blossom is a group of orange, mandarin and lemon trees. Fruit trees found in warm and soft areas.

In Spain, large plantations of these fruit trees are found in the coastal areas of the Mediterranean coast: Valencia, Murcia and Andalusia. Areas with a warm and mild climate.

d) Flowering and harvesting

Due to the different varieties of orange and lemon trees, we always find orange blossoms in spring and sommer. However, these trees start to flower in early spring. Consequently, orange blossom honey is harvested throughout the summer and autumn.

f) Pollen

The majority pollen found in these honeys belongs to the orange tree, Citrus x sinensis. However, pollen from other plants can also appear; fabaceae, asteraceae, cistáceas, olive tree, holm oak or kermes oak.

The orange varieties are mostly from the Navel group, which have the peculiarity of having pollen sterility and antenna indehiscence to reduce the amount of seeds.

Orange blossom honey brings us great health benefits as well. The benefits it brings to our health are due toits high sugar concentrations, its enzimes and components from orange blossom flowers and pollen. Among these popular uses of this honey, we have:

• Helps the sore throat: This honey has beneficial effect in the fight against sore throat and other respiratory conditions.

Our honeys of orange blossom have not been pasteurized or manipulated. One of the most common manipulations is its pasteurization, a process that heat the honey to never cristalize. For this reason, our honey can be found in a solid state or in the process of crystallization. This process is accelerated to temperatures close to 14 ºC. As a consequence, it is more common to find it solid in the winter and liquid in the summer.

This honey will lose some of its qualities after two years.
