How to prepare your own olives

Olives for dressing must be picked before they turn purple or black, with the exception of olives from Lower Aragon, which wait until they turn black. Once harvested they are cracked in the cracker and washed in water until they lose their bitterness, at this point they are put in brine for conservation. The cracking process is carried out to eliminate the bitterness of the olive more quickly.

Place the cutter on a cube and pass the olives through one of its holes according to their size.
