The calluna honey is a type of heather honey, of the calluna variety, which is also harvested every year at a different time, because the flowering of the heather is early and irregular and very sensitive to drought and water shortage. It will take very dark colors if you have some holm oak or rumble myelates.

Aroma

Calluna honey has an intense and persistent aroma, especially in retronosal, reminiscent of autumn deciduous forests, humus and mushrooms. On the palate, salty notes and marked bitter components stand out with greater or lesser intensity depending on the type of heather and its purity.

If the heather honey has some blackberry honey, we will find a honey with a higher degree of humidity, more acidic notes and with a greater tendency to crystallize, even forming two phases, a liquid of high humidity and a solid with less humidity. If the honey has holm oak or oak myelates, it will have saltier notes with a marked hint of malty aromas.

Calluna honey has little tendency to crystallize, but in doing so, it takes on a coarse granulation.
